Keep it simple: Cook at home

Here I am again, struggling on what to make for dinner. The struggle is real people, preparing for your everyday meal is not easy, imagine preparing a meal for your three picky kids. If only we can do Chinese takeout every night (yum!) but no we can't have that, I have to be a good mommy and a good wifey and cook something healthy and edible.

I am form a family of great cooks and it isn't a surprise that I got into cooking as well. The difficult thing isn't cooking, its more of what to have for dinner. I have a "will my kids eat it" situation going on. My three boys barely eat meat and you can bet on it that they don't eat vegetables either. So what do I feed them? It's more of a science experiment in the kitchen rather than cooking. They love eating hotdogs and rice for dinner and banana for dessert. If only I can feed them that everyday, then my life would be much easier but as a mom you worry about their eating habits.

So I whipped up some recipe (secretly going on Pinterest) and I found a salmon recipe. Its from Marzia of littlespicejar.com

GARLIC BUTTER BAKED SALMON IN FOIL

Serves: 3-4

INGREDIENTS

  • 1¼ pound sockeye or coho salmon (preferably wild caught)*

  • 2 tablespoons lemon juice

  • 2 cloves garlic, minced

  • 2 tablespoons cold butter, cubed

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ teaspoon Italian seasoning

  • ¼ red pepper flakes

  • 1 tablespoon chopped parsley, for garnishing (optional)

INSTRUCTIONS

  1. Position a rack in the center of the oven and preheat the oven to 375ºF.

  2. In a saucepan over medium heat, combine the lemon juice and minced garlic, allow the lemon juice to reduce to 1 tablespoon. Add in 1 tablespoon of butter, remove pan from heat and swirl so the butter starts to melt. Place back on the heat for a few seconds, removed and continue to swirl until butter completely melts. Repeat with second tablespoon of butter. When butter is completely melted, remove sauce from stove.

  3. Place the salmon filet in a piece of foil large enough to fold over and seal. Using a brush or spoon, brush the salmon with the garlic butter sauce. Season with salt, pepper, Italian seasoning, and red pepper flakes. Cover with foil so that all sides are properly closed so the sauce does not leak.

  4. Bake the salmon for 12-14 minutes or until firm. Open the foil and allow the fish to broil under the broiler for 2-3 minutes, keeping an eye on it so the fish does not burn. Remove from oven, top with parsley. Serve immediately.

Now here is my version. I reduced the garlic to 1 clove and substituted it with garlic powder. I also took out the red pepper flakes since I'm making this for my kids.

The thing about this experiment is, I mean this recipe is they actually liked it. Which was very surprising but nonetheless a relief for me. Another recipe to add on "my kids will eat this recipe book."
